Dining Experience
Mealtimes at Bushmount are an important time for our residents, staff work to promote an environment that is relaxed and social. Residents are encouraged to make food choices and mealtimes are always flexible.
We always ensure that we provide a varied and interesting menu with an emphasis on quality local produce and individual care and dietary requirements. All staff are trained on how to provide specialized diets and modified meals.

At Bushmount Nursing home we believe food and the dining experience is a fundamental part of our residents day. All our food is prepared to the highest standard on site by our team of full time chefs and kitchen staff, who are led by Head Chef Mick Duignan.

Mick Duignan
Head Chef
Hi, I am Mick Duignan, the Head chef here in Bushmount. I am originally from Navan but started my career, training and qualifying in London, after which I worked in several restaurants in London and then joined ‘Eat Your Hearts Out’ to become a rock’n’roll chef, travelling with bands around the world. I did many tours, chefing with amongst others Ub40, Guns’n’Roses, Paul McCartney, Tina Turner, Tom Jones and Simply Red where I met my wife, Sophie. We had our lovely daughter Jessie in 1996 at which point we both left the road and started our own restaurant, Dunville Place in Ranelagh, Dublin. Four years later, in 2000, in search of a less hectic life, we moved to West Cork. I had the great pleasure of working with Sean and Tina in O’Callaghan Walshe until I started here in 2009. And the rest, as they say, is history!
I love working here in Bushmount, I have a fantastic kitchen team, we love looking after the residents and their various culinary needs. When I first started in Bushmount 15 years ago I never thought I would still be here all these years later but I get on so well with everyone, I really enjoy it, particularly working with the food for the residents with dysphagia. I find this part of my work very interesting. It gives me great satisfaction when I meet residents and they tell me how much they enjoyed their meal that day.
